Today was the first snow of the season. We went to a Christmas Market this morning. Now I have Christmas music playing...
I have Christmas on the brain and can't seem to get geared up for Thanksgiving. I'm going through my recipes and trying to figure out what I will make for some of our friends who will be joining us....maybe something from Paula or Ina. Or maybe we'll just go out for schnitzel and come back to our house for dessert?
One thing is for sure...I know I will make my Grandma's Pumpkin Squares...I'll share the recipe just in case you are searching for ideas too!
PUMPKIN SQUARES
Crust:
1 cup flour
1/2 cup quick oats (oatmeal)
1/2 cup brown sugar
1/2 cup softened butter
Combine all of these ingredients until crumbly-pat into a 9x13 pan. Bake at 350 for 15 minutes or until lightly brown.
Pumpkin Layer:
1 and 3/4 cup pumpkin (1 can)
1 14 oz. can of sweetened condensed milk
1 large egg
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon of cloves
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1/2-3/4 cup of hot water (be sure to watch consistency...do not want it too runny)
Mix ingredients together, pour over crust and bake at 350 for 20 more minutes.
Topping:
1/2 cup chopped pecans
1/2 cup brown sugar
2 Tablespoons of softened butter
Mix and sprinkle over the top of the hot pumpkin and return to the oven for 15 more minutes.
Let cool, then serve with whipped cream. Refrigerate if not all gobbled up in one sitting:)

is this the pumpkin dessert you made when I was visiting? Also, I tried to comment on your puppy post but my computer was acting up. If I could get a dog right now I'd want what you guys are getting. They are SO CUTE! Happy Thanksgiving.
you won't believe this - but I use this same EXACT recipe!!! That's SO funny!! I've made it the last 4 years or so, and it's always that biggest hit... that's so cool!
Actually they are even better chilled overnight in the fridge!
